strawberry jam

Every year we go to a U-pick Strawberry patch to pick strawberries. The days afterward are a scramble to eat all the strawberries before they go bad. This year I decided to make strawberry jam. I bought a jam making kit at Target. I didn't really need it... could have found all the supplies separately... but it was so cute.

Ingredients
2 quarts strawberries
2 teaspoons grated lemon peel
1 package Ball 100% Natural¨ Fruit Jell¨ Pectin
7 cups sugar

Boil jars and closures.

Wash and crush strawberries.

Combine strawberries, lemon peel and pectin in a large saucepot.

Bring mixture to a boil, stirring occasionally.

Add sugar, stirring until dissolved. Return to a rolling boil.

Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Carefully ladle hot jam into hot jars, leaving 1/4-inch headspace.

Wipe jar rim clean. Place lid on jar with sealing compound next to glass. Screw band down evenly and firmly just until a point of resistance is met - fingertip tight.

Process 10 minutes in a boiling-water canner.

Yield: about 8 half-pints.

Tahdah! I gave almost all of the jam away to family and friends.
