strawberry jam Every year we go to a U-pick Strawberry patch to pick strawberries. The days afterward are a scramble to eat all the strawberries before they go bad. This year I decided to make strawberry jam. I bought a jam making kit at Target. I didn't really need it... could have found all the supplies separately... but it was so cute. Ingredients
Boil jars and closures. Wash and crush strawberries. Combine strawberries, lemon peel and pectin in a large saucepot. Bring mixture to a boil, stirring occasionally. Add sugar, stirring until dissolved. Return to a rolling boil. Boil hard 1 minute, stirring constantly. Remove from heat. Skim foam if necessary. Carefully ladle hot jam into hot jars, leaving 1/4-inch headspace. Wipe jar rim clean. Place lid on jar with sealing compound next to glass. Screw band down evenly and firmly just until a point of resistance is met - fingertip tight. Process 10 minutes in a boiling-water canner. Yield: about 8 half-pints. Tahdah! I gave almost all of the jam away to family and friends.
