whoopie pies

My mom has made whoopie pies for as long as I can remember. They are my dad's favorite cookie. My grandma gave her the recipe, but even hers don't come out as nice and fluffy as my moms. Mine come sorta close.

Cookie Ingredients
2/3 cup shortening
3/4 cup sugar
1 egg
1 teaspoon vanilla
2 1/4 cup flour
1 cup Quick chocolate powder
1 teaspoon salt
1 teaspoon baking soda
1 cup milk

Cream together: shortening, sugar, egg and vanilla.

Mix together flour, chocolate, salt and baking soda in a separate bowl and add to cream, then add milk.

Add tablespoon fulls to baking sheet then bake at 400 degrees for 8 minutes.

Filling Ingredients
2 cups powdered sugar
1 egg white
1/2 cup shortening
1 tablespoon butter
1 teaspoon vanilla
1 tablespoon flour
2 tablespoons milk

Mix together fast until fluffy

Put two cookies together with filling inside. Viola!
