Green Food

Today was Sarah's St. Patrick's Day party. I thought about making something authentically Irish to take, until I did a search for recipes online. Seems all Irish food consists of apples, potatoes or corned beef. I decided to make something green instead. Guacamole was at the top of my list until my friend Kenn forbade me to bring it. It was his signature dish. The only other greenish thing I was up for making was artichoke dip. I am not a fan of artichokes, but this dip is super. Then again isn't everything that involves cheese?

Ingredients: 14 oz. can of artichoke hearts, 3/4 cup mayonnaise, 1/4 cup grated Parmesan cheese,1 teaspoon lemon, juice, dash of garlic powder. Drain and chop up the artichoke hearts and mix in with all the other ingredients. Put in a casserole dish and bake at 350ยบ for 30 minutes. I always make a double batch... one simply isn't enough. Buttery crackers for dipping taste best (I think).
