Zucchini Pancakes

I got some funny looking zucchini in the garden this year. One blobby zuke is earmarked for zucchini bread and the other for supper as zucchini pancakes.

Years ago, I collected a bunch of great zucchini recipes from blog readers. Zucchini pancakes are a crispy and tasty way to use up a zucchini. (the sour cream is key by the way)

Post vacation cooking: Poppers, sausage & zucchini

It seems to be pepper season. Our jalapeno plants have lots of peppers that are ready. I'm terrified to touch them. I'm convinced I'll rub my eye immediately after and be in agony.

We got these big hot peppers in our CSA share so I decided to make poppers on the grill. I mixed up cream cheese, monterey jack cheese, herbs, green onions, garlic and chicken and stuffed in the peppers.

The poppers went on the grill with sausage and zucchini strips. Wow, those poppers were so smokey and good!

Zucchini bread to share

Last week's CSA had zucchini included and it has finally cooled off enough for me to venture to turn on the oven. That means two loaves of zucchini bread with my tried and true recipe.

I like how this recipe makes two loaves. One for home and one to take to the office to share. It looks especially appetizing when wrapped in parchment paper and baker's twine!

Happy Birthday Cake Bunting

I've seen these cake buntings on Pinterest and was biding my time to make one.

Today is Shruti's birthday and the fall birthday girl gets my favorite baked good of the season - zucchini bread!

Thank goodness for the cute bunting because without it, zucchini bread doesn't look very exciting for a birthday!

Zucchini Bread

The best thing about zucchini...

...zucchini bread. My family has been gobbling it up. I used my tried and true zucchini bread recipe.
