I am on a squash kick. Chuck (who also introduced us to funny eggs) brought an acorn squash over and showed us how to make it. We just cut it in half, scoop out the seeds, add lots of butter and brown sugar, and bake at 350 degrees for about an hour to an hour and 15 minutes. I bake the seeds along side with oil and salt for a little appetizer.

Yum- diddley delicious. We have had several acorn squai (plural for squash... kidding!) since and have a butternut one sitting on the counter awaiting it's fate.

  4. That sounds very good. I love yams or sweet potatoes prepared the same way. It's yummy, especially on a brisk fall day. Whenever I go to the Original Roadhouse Grill, I order my meal with the baked yam in place of a traditional baked potato. Delish!

  5. I make mine the same way but now cook them in the microwave. Tried it once, success, stuck with it. just put a little water in the bottom of the pan and walaa!

  6. have you ever made nigella lawson's butternut squash and pasta soup? it is phenomenal. i think the recipe is in her 'how to eat' book. i highly recommend this for anyone on a squash kick! yummelicious.
