Homemade Cantina Bowl

We aren't doing a detox this year but I am trying to cook at home more and eat healthy in 2013. I saw they have these Cantina Bowls at Taco Bell and thought it looked pretty good.

I recreated it at home. It was pretty fast and easy for a week night meal. I started with a packet of 90 second microwave rice and added grilled chicken, black beans, corn, tomatoes, avocado, lettuce, cheese and red onion. So good! I'll definitely make this again.

  1. 90 minutes in the microwave seems like it would make your rice into crispy critters. :-) Recipe looks delish, though, and I'll try it for sure (maybe with 90 second rice, though).

  3. I actually didn't use a dressing and it was still very flavorful!
