I think this might be the last harvest from our backyard garden. Look at those adorable eggplants!
I chopped up those eggplants and breaded them for dinner. It's not exactly eggplant parmesean, but we like it better because the eggplant stays crispy. We just dollp the tomato sauce and parmesean cheese on top.
