Comforted

I think Comfort Day in the office was a big success. I know I enjoyed wearing my slippers all day. I was highly comforted by the breakfast cereal and comfort food that showed up at lunch. There was meatloaf, mashed potatoes, mac and cheese, rice pudding, tuna noodle casserole, home baked bread, oreos, cookies and more. My own Scalloped Corn seemed to go pretty well. It's such an easy recipe.

Scalloped Corn

2 cups of cooked corn (I think white corn is best)
2/3 cup of cracker crumbs (I use saltines)
1 cup of milk
2 tablespoons butter
2 eggs
1/5 teaspoon pepper
1 teaspoon salt
1 tablespoon sugar

Beat the eggs and mix in the crackers and milk... mix in corn, butter and seasonings. Bake 40 minutes at 350ยบ.

Sometimes I add cheese too, like parmesean. Cheese makes everything better.
