Continuing with my 2015 to-do of "more Korean cooking", I made japchae for dinner tonight. The base is dangmyeon, a noodle made from sweet potato. I remember as a kid, I called them "plastic noodles", and that is sort of what they look like when they are cooked.
Added to the noodles.. beef, spinach, carrots, muchrooms and onions. It turned out pretty well. Acceptably close to my Mom's version.
