Pickled Eggs and Beets for Easter

I made batch of pickled eggs and beets tonight for Easter. They are family Easter tradition... from growing up in Pennsylvania Dutch country.

There are a lot of recipes out there but this very simple one is how we have always made them.

Boil 1 cup of apple cider vinegar with 1 cup of beet juice, 3/4 cup of brown sugar and 1 teaspoon of salt. Pour it over a half dozen hard boiled eggs and a half dozen small beets in a quart jar then put them in the fridge.
