Roasted, roasted, roasted

When it turns cold all I want to do is roast vegetables. I didn't care for them when I was a kid but now I loved ROASTED BEETS. Here is a trick - roast them with the skins on and use a paper towel to rub the skins off after roasting. They come right off - like magic!

I picked up a variety bunch of beets at Wegmans and after roasting they looked like ombre beets.

Those beets went right into a salad with goat cheese, candied walnuts and a balsamic reduction dressing.

Other veggies I have roasted recently... ROASTED SWEET TATEYS.

ROASTED BUTTERNUT SQUASH. which I whipped into a soup in the Vitamix.

Remember the roast chicken? (oh yes, I like to roast meat too)... in the background sits a ROASTED ACORN SQUASH. I find myself standing in the produce department of Wegmans looking for my next roasting victim.
