Spicy Chocolate Fudgesicles

This weekend I made another kind of popsicle - spicy chocolate fudgesicles! AND I made them in the monster popsicle molds Aaron got me for Christmas. I love them. It's like eating one eyed monster brains.

The fudgesicles were delicious. The best popsicles I have made yet.

Here is the recipe - adapted from Alton Brown's fudgesicles.

Spicy Chocolate Fudgesicles

8 ounces semisweet chocolate chips

1 1/2 cups heavy cream

1 cup milk

2 tablespoons cocoa powder

1 1/2 teaspoons cinnamon

2 teaspoons vanilla

Sprinkle of cayenne pepper (to taste)

Pinch of salt

Pour the chocolate chips in a bowl. Bring cream, milk, and cocoa powder to a simmer over medium heat in a saucepan. Pour the milk mixture over the chocolate chips and whisk together until smooth. Add in cinnamon, vanilla and salt. Sprinkle on cayenne to taste. Fill popsicle molds and freeze.

Mango Lime Chile Popsicles

I was having the gals over for dinner and there was a Mexican theme. Since I am still on a popsicle kick, I decided to make Mango Lime Chile Popsicles.

I found this recipe at saveur.com but ended up using a tweeked version of this one.

Mango Lime Chile Popsicles

2 pureed mangos

1/4 cup water

3 juiced limes

3 tablespoons sugar

1 tsp salt

2 tsp chile powder

1/4 tsp cayenne pepper

Blend it all together and then freeze in popsicle molds.

They are pretty intense for a popsicle! They remind me of the candy my friend Kenn used to bring from Mexico.

Peach & Honey Popsicles

I have "Make popsicles" on my summer to do list. I've been thinking about it since last summer. My first creation was a batch of peach and honey posicles.

They turned out pretty tasty.
