Stuffed Peppers

We are loving the veggie haul we are getting from our co-op farm.

This is what we got today... see those two green peppers?

We made them into stuffed peppers for dinner. I don't even like green peppers, but I like stuffed peppers. I just eat the guts out of them and leave the pepper carcass behind. Cheese is also key.

  2. I don't like green peppers either but I do like red and yellow. Wonder if that would work? How come every recipe photo I've ever seen for stuffed peppers shows green?

    What did you stuff them with? They look yummy!

  3. It's a typical stuffed pepper mixture of burger and rice etc. I think I will put the recipe on my project site.

  4. So in my family, we are big fans of the "unstuffed peppers." We make the stuffing part the same (the burger rice, tomato sauce, etc.), slice up a green bell pepper (I don't think it would work with another color), and mix it all together. The mixture gets put into a casserole dish, and then topped with cheese. I don't eat the peppers either, and just pick out the strips of them in the dish. Not sure why, but this method has always seemed to work better than actually STUFFING the peppers...

  5. It's interesting to see you post the stuff you're getting from your co-op. I'm in a CSA in NC, and we aren't getting the stuff you are anymore - we're getting stuff like winter squash! And, we haven't gotten lettuce since May. I'm hoping when it cools off we'll get lettuce again. Crazy!

    It's fun getting the random veggies though, as I end up finding new recipes a lot that way.
